Herbal Wines, Cordials & Elixirs

The art of fermentation began more than 30,000 years ago, when ferments were sacred and often highly medicinal. This class will explore the history of herbal brewing and an introduction into basic winemaking principles. Participants will make medicinal elixirs and cordials (think violet elixir to add to a sparkling wine!), herbal wines and learn ways to improve their herbal apothecary. We will discuss the medicinal values of the beverages we make (the apéritif had a purpose beyond being delicious), and gain inspiration for other tasty possibilities. Class includes an outdoor herb walk.
